The botanicals in our Barrel Aged Gin are from the Australian Dry and are sourced from all parts of Australia including: Blood lime from the McPherson Ranges, Aniseed Myrtle from Nambucca Valley, Old Man Saltbush from Inland Australia, Wattle seed from Outback Australia and Mt Pepper Berries from Tasmania.
Then, the magic happens and our Australian Dry gin is matured in Starward Whisky Barrels which have previously held Apera.
